At Maison Zugno, our deep connection to the Jura terroir is reflected in every aspect of our establishment, especially in the kitchen, orchestrated by our Chef, Quentin Defert, a native of the region. Passionate about local products, Quentin showcases the bounty of our region throughout the seasons, using carefully selected ingredients.
We grow our own aromatic herbs, and thanks to passionate organic farmers, we apply permaculture principles in our vegetable garden, providing a variety of vegetables, along with some fruits and citrus, that enrich our cuisine.
Our commitment to local craftsmanship extends to the art of the table. We collaborate with talented artisans like Maison Lacker in Arbois, where Margot creates custom pieces, including appetizer plates, decorations, and single-flower vases. Some of her creations even adorn our hotel. In Dijon, Atelier Noma crafts unique plates for us using raw materials from Nièvre. Additionally, Gaëtan, a Jura-based artisan from BotaBota, designed a unique plant wall for our establishment, evoking the forested surroundings of our Maison.
Lastly, our maître d’hôtel, Thibaut, also from the Jura, graduated from the Poligny hospitality school, further strengthening our ties to the region and our dedication to local excellence.
